Preheat oven to 350.
Olive oil
Butter
2 Fish Fillets of choice
Sea Salt and Black Pepper
1/2 cup White Wine or Broth (chicken or fish broth work well)
Optional: fresh parsley or tarragon
Grease bottom of a shallow baking dish with olive oil or butter. Place fish fillets in pan and put a pat of butter on top of each. Sprinkle with sea salt and pepper. Pour wine or broth in pan.
Bake on the top rack in the oven for about 10 minutes, being careful not to overcook. Fish should feel firm and be white, not pink. Sprinkle with fresh parsley or tarragon for color if desired.
