Tortillas

3 cups whole wheat flour
1 t salt
1 c water
1/2 c olive oil
 
 
Mix all ingredients till they stick together.  If it's gooey or runny, add more flour, if it's dry, add more liquid. Roll it into golf ball sized balls - about 12.  if you have a tortilla press, center them on it...   if not, use a rolling pin or a smooth glass and roll them out.  Throw them on a hot griddle - about a minute or 2 on each side.   shorter times = softer, longer times = crisper. You can also sub out about 1/2 corn meal for corn tortillas.
